Jude's Chicken Curry - New Recipe


3 to 4 boneless skinless ck breast
2-3 stalks of broccoli
8 (oz) of chedder cheese (more if you like)
One package of crackers (just one of the long packs that you get out of a box of Ritz)

*Sauce*
(2) Cans of Cream of Chicken soup
(1) cup of Mayo
curry powder to taste (I usually add 2 teaspoons before I had more)


Pre-heat oven to 350
Boil thawed Chicken until no longer pink. Cut into cubes or strips (whatever you prefer). Take broccoli and boil in same water as chicken was in for about 15mins, or until soft. Cut into small pieces. Place chicken and broccoli in a buttered baking dish (large enough that the ck&broccoli cover the bottom of the dish). Mix together sauce. Pour over chicken and broccoli. Sprinkle chedder cheese over entire dish. Brown the crackers in a skillet with 2 table spoones of butter and sprinkle on top of cheese.

Bake in oven 30mins covered with foil, remove foil, then continue to bake another 15-20mins. Enjoy!
