Mel's Marvelous Chicken Salad Recipe
4 cups lettuce
1 cup grapes, seeded & halved
2 small apples, diced
1/4 cup red onions, diced
12 oz cooked, skinless boneless chicken breasts, cubed
1/4 cup bleu cheese
1/4 cup chopped pecans
1/2 cup Fat Free Raspberry Vinagrette Salad dressing
Combine all ingredients except blue cheese, walnuts & dressing in a large bowl.
Place about 1 1.2 cups of salad mixture on each of 4 plates and top each with 1 tablespoon of blue cheese, 1 tablesoon of pecans & 2 tablespoons of dressing.
